Hi Dan,This has been covered on here SO many times in the past ,use the search function fella theres so much info on this forum for every engine conversion going on 205's so have a good look.

IF theres anything that isn't covered and I dont think there is drop me a PM and I'll willingly try to answer you questions

Driveshafts- 205 ones if you are using the 205 wishbones, the 309 ones are longer and need the 309 wishbones so they can fit. Either 1.6 or 1.9 driveshafts are fine though and will handle std GTI-6 power no troubles.

Hubs- Whatever fit the shafts you are using.

Wishbones- Either 205 or 309 ones for more neg camber. You may need the 309 shafts to run the wishbones, you may not. Im running them with 205 shafts no problem.

Engine mount- Do a search for engine mount options, there are various ways of doing it. I personally use all the standard engine mountings as they come, and then modify everything to fit (exhaust, master cylinder etc).

Exhaust- A good quality standard 205 GTI system will do fine for a GTI-6, obviously with a shortened and re-angled downpipe and the lambda boss fitted.

Radiator- Standard 205 GTI will do fine.

Subframe- Standard.

Its all been covered a thousand times though as Tris has said above, but everyone does their conversions in their own way, so weigh up all the options before you get the spanners out!
