Probably a stupid question, but what's the best way of removing the remains of the sump gasket from the sump and block?

A wallpaper scraper works well. Then rub the surfaces with some meths or thinners to get any sealant off.

I ran a blow torch over it (not to burn it but get it hot) Then a non metalic scraper is best but any scraper is good if you are careful to tease it off.

Initially I tried removing the gasket from the sump just with a scraper and wish I'd never started. I then thought I'd just burn it off, which it doesn't (heat resistant) and was still going to take ages. I tried scraping again only to find by accident, that it peeled off a treat. It took seconds :)
