i currently have my rear beam off the car and was going to strip it down grease up paint and reassemble. what is the best way of ensuring i keep the same ride hight?

Measure the distance between damper mount bolts. Use a fixed dummy damper at this dimension when rebuilding.

However if you are stripping it, it's worth doing bearings and seals why you are there .
