What coolant switch would you advise for a GTI6 running a twin fan setup?

depends on the wiring, I take it you mean a twin fan relayed diesel/aircon 205 setup given the 306 fan cowing does not fit a 205?

 

306 rallye fan switch should be about the right temperatures, or a turbo diesel unit is slightly lower temperatures.

Yeah mate, it's an AC spec setup.

 

Will the plugs all fit?

as long as you have a post 90 setup with the blue 3 pin plug.
