Everything needs to be set up (TPS, AFM, ignition advance, idle screw), good clean injectors, sufficient fuel pressure and volume, no air leaks in the system, dizzy arm and cap, ignition leads, sparks, coil, etc. When all this is checked/replaced/set up, then, and maybe just then, the car might stop kangarooing.

For starters, you could try having a read through the haynes manual (setting up the TPS, among other chapters) which can even be found here on the forum, and using the search function which really could become your best friend.

Good luck.

I had a car come in once, with the same problem (excesive kangarooing), that was already looked at by a 'few' mechanics.

They told him that it's a 20 year old car and that everything needs to be replaced (unfortunatelly they weren't far from the truth).

The owner had already given up on it.

I did the ussual routine check which didn't point to anything that could cause this. On further inspection it turned out to be the cable that goes from the dizzy to the loom. The cable was warn and the wires exposed, that's a common fault on them. I replaced the cable, then set the ignition advance accordingly (because the cable was faulty they had to compensate with the ignition and idle for the car to work), adjusted the idle, and that was that.

A shot in the dark, really, because it can be caused by a number of things, but this one springs to mind.
