The bit that connects to the engine, does it have to be rubber with the material overbraid, or will some normal rubber water/oil hose be OK?

Rubber hose is OK, but water hose will probably collapse under vacuum. A decent motor factor will be able to sell you a length of reinforced hose for servos that will be ideal for the job.
