when i turn the key on my 205 the temp gage shoots right up to the red and stays there,ive got plenty of water

It's shorting to earth somewhere.

Check the wiring for damage.

Yes, back of the thermostat housing, smaller of the two senders with single wire terminals.

 

IIRC wire should have a red cap on the spade connector.

Also the two wires could be the wrong way round.
